Banana Chocolate Chip Coffee Cake

BANANA CHOCOLATE CHIP COFFEE CAKE
Starbucks Copycat Recipe

1 1/3 cups granulated sugar
1 cup sour cream
1/4 cup butter or margarine, softened
4 large eggs
4 medium, ripe bananas
2 teaspoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips

Preheat oven to 375 degrees. Spray either a 9×11″ baking pan or classic Bundt pan with non-stick cooking spray; set aside. Beat sugar, sour cream, butter (or margarine), and eggs together in mixing bowl on low speed for 1 minute. Beat in flour, baking soda, and salt on medium speed for 1 minute. Beat in bananas and vanilla on low speed for 30 seconds. Stir in chocolate chips (by hand).

Spread batter in prepared baking pan and place in center of preheated 375 degree oven for about 35-40 minutes, or until light brown on top and toothpick inserted near center comes out clean. Cool in pan (if using a Bundt pan cool slightly, then turn out onto serving platter or cake plate); cut into slices or squares of desired size and thickness. Serve warm or at room temperature.

  1. This turned out good, though didn't taste much like the Starbucks version.. One issue I had was pretty much all the chocolate chips "sank" to the bottom as it cooked. Not sure how to prevent that. The Starbucks version also has a lot of chocolate chips resting on top of the crust, which I'd like to mimic. Maybe sprinkle some on top before going into the oven, or add some on halfway through baking. Either way, good recipe for banana chocolate chip bread.

    1. If you will "dust" the chocolate chips with some flour before mixing them into the batter, they shouldn't sink to the bottom.....it has always worked for me.....IMHO

  2. Toss your choc. chips in about a tablespoon of flour--prevents them from sinking! Also, I save a few from going into the batter then when there's 5 or 10 min left, I sprinkle them on top. Hope I could help you! :)

  13. Somehow mine came out with basically a pancake consistency rather than a real cake consistency? I'm not sure what I did wrong.
