Apple Bran Muffins
Starbucks Copycat Recipe


Makes 24 Muffins

2 1/2 cups flour    
2 cups bran cereal, crushed  
2 teaspoons baking powder  
1 1/2 teaspoons salt  
1/2 cup dried apple, chopped  
1/2 cup dried cherries
1 cup boiling water  
1/2 cup unsalted butter, softened
1 cup sugar
1/2 cup honey
2 large eggs
2 eggs
2 cups buttermilk
1/2 cup walnut pieces

Preheat oven to 400 degrees and line muffin tin with baking cups. In a small bowl, stir in flour, baking soda and salt. In another bowl combine bran and dried fruit with boiling water. In a large bowl beat butter until creamy. Gradually beat in sugar, honey and eggs. Beat in buttermilk, flour mixture then bran and walnuts mixture. Divide the batter into the lined muffin tins. Bake muffins in the oven for 20 minutes.
